Japan-born chocolatier Yasushi Sasaki has been named Brussels' chocolatier of the year by the prestigious Gault&Millau food guide, earning praise as a “flavour wizard”. Sasaki moved from Japan to Belgium at the age of 19 with no plans or ability to speak French before he decided to chase a career as a chocolatier which he now says is his whole life. His chocolate creations are marriages of culinary traditions from Japan and Belgium – sourcing and using ingredients such as matcha tea, yuzu and red beans.
