Gajrela / Carrot Pudding / 6 hours of cooking in 60 minutes

Gajrela somehow always reminds me of Mudi Mamu (uncle).
Whenever he visited us, amongst other preparations, making Gajrela for him was top priority for Mama.
I remember waking up in the mornings and finding Mama and Mamu, sitting on the table,
Outside Nanima’s kitchen, catching up with each other, over some cold Gajrela topped with fresh cream.

Ingredients

Milk: 2 1/2 liter
Rice: 1/4 cup soaked
Carrots: 1 kg grated
Sweetened condensed milk: 400g / 1 and 1/2 cup
Cardamom Powder: 1 tsp
Kewra water: 1 tsp
Method

Boil together milk, rice and carrots
Cook on high heat for 10 minutes
Then cook on low heat for I hour
Stirring and scraping the bottom every 15 minutes
Add condensed milk
Put in cardamom powder and kewra in the end
