Ube Cheese Pandesal Overnight Proofing by Mai Goodness | Using Home Made Bread Improver | Bread Roll
Easy step by step procedure and tutorial in making Ube Cheese Pandesal using bread improver or tanzhoung and proofing it overnight so you can have freshly bake bread in the morningit. It's a delicious bread roll with purple yam and cheese filling and purple yam (ube) powder coating. Turn it into a business or try it at home for your family to enjoy!
Ube Cheese Pandesal
Roux or Bread Improver:
• 1/2 cup (125g) fresh milk or evap milk
• 1/2 cup (60g) bread flour or APF taken from the 500g of flour for the dough
Dough Ingredients :
• 1/2 cup (125g) of milk or evaporated milk
• 1/2 tsp (1g) of instant active yeast or you may use 1/8 tsp of instant active yeast if it's summer & may take 6 to 12 hrs of proofing depending on the surrounding temperature .
• 1/2 cup (110g) light brown sugar
• 1 large egg, room temperature
• 1/2 cup (110g) vegetable oil or canola oil
• 500g (3 3/4 cups to 4 cups) Bread flour or all purpose flour
• 1 tsp (5g) iodized salt
• 1 tbsp vanilla flavoring or 1 tsp vanilla extract
• 2 tsps ube flavoring
Filling:
• 1 225g quickmelt cheese or regular cheese
• Ube haleya
Coating:
1/2 cup ube powder or fine bread crumbs
• First proofing or rest for 1 hour.
• 2nd proofing for 6 to 8 hrs.
• Preheat oven at 180⁰C for 15 minutes. Then bake for 15 to 18 minutes or until golden brown.
• Turn the pan around halfway through the baking if using conventional oven.
Note:
*If you want to bake it immediately, Increase the yeast measurement to 2 tsps or 6g. Then 1st proofing should be 1 1/2 hrs and 2nd proofing 1 hour then bake at the same temperature and time.
*1/2 tsp of instant yeast may take 6 to 8 hrs of 2nd proofing
*1/4 tsp of instant yeast may take 8 to 10 hrs of 2nd proofing.
*1/8 tsp of yeast may take 10 to 12 hrs of 2nd proofing depending on the surounding temperature.
Yields: 20 pcs of 50g each
Costing:
Total cost of ingredients - P160
Overhead Cost (water, elec, gas, fare etc is 40% of the cost of ingredients) - P64 (adjustable)
Total Costing - P224
Per piece costing for 50g - P11.20 x 1.70 (tubo) = P19.04
You can sell it for P20.00 each
