The BEST Crockpot Chicken & Veggie Soup - Chili Hybrid!!

This may be the best thing I have ever made... so glad I wrote down what I put in as I went along!

Too your crockpot, add:

3 Chicken Breasts
1 Large Chopped Onion
1 Chopped Bell Pepper
1 Cup Chopped Carrots
14.5 Oz Can Fire Roasted Tomatoes
10 oz Can Rotel
8 oz Tomato Sauce
7oz Green chilies (use mild if making for kiddos)
15 oz Black Beans (drained & rinsed)
1 Can or 1.5 C Frozen Corn
2 Cups Chicken Broth
2 T Minced Garlic
1 T Cumin
2 t Chili Powder
1/2 T Salt
1/2 T Pepper
+ 3/4 Block Cream Cheese

Shred Chicken once cooked through, stir and add 3/4 Block Cream Cheese. Cook until melted, stir.

Top with these to taste:

Chips
Jalapenos
Cilantro
Sour Cream
Olives
Avocado
ENJOY!!
