HEALTHY PUMPKIN WAFFLES!

I say "healthy" because this recipe is 100% whole wheat, sugar free & contains no oil!

I scored with this recipe (which is 100% MY OWN creation!! (I for once actually recorded a recipe as I created it.... got lucky with how amazing it turned out ;-))

Please let me know what you think if you make it! Of course you could play around with the spices if you would like... and the eggs (downside of having a helper ;-)... either just throw them in whole or just mix in the yolks and later fold in the whites (whip them until a stiff peak forms then fold (right before you cook)) ::NOT needed but makes for a bit of a lighter waffle... these were not at all heavy but that is an option!

Here is the recipe:

1 3/4 C. WW Flour
1/2 tsp Salt
1 tsp Cinnamon
1/4 tsp Ginger
1/2 tsp Cloves
1 Tbs baking powder

2 Eggs (see egg note above)
1 3/4 C Milk (dairy free? use almond, soy or coconut milk!)
1 Cup Pumpkin Puree (here is how to make your own: http://youtu.be/OngpHpKOpZ4)
1 tsp Vanilla

(chocolate chips for fun hehe)

Nuts would also be an awesome touch for a bit of crunch!
