Hello! On today's episode, I'm cooking eggplant parmesan. This is a slightly healthier twist on this Italian classic. Whole wheat pasta, a lighter breading, and easy on the cheese - this version will still get you all the flavors you crave without feeling too guilty. Tear on some fresh basil for that last bit of freshness. :)
