Over 2020 and the current #MCO, many of us found ourselves staying at home and EATING AT HOME way more than we used to. #NyonyaLaksa is definitely one of my personal favourite local #MalaysianFood and yes, even though it may seem slightly complicated to make - I assure you, it's gonna be DELICIOUS.

NYONYA LAKSA
Part 1: Laksa Paste
🌶️ 1-2 knobs of Tumeric
🌶️ 1 knob of Ginger
🌶️ 10 cloves of Garlic
🌶️ 10 Shallots
🌶️ 3-4 stalks of Lemongrass
🌶️ 2 inches of Lengkuas
🌶️ 15 Dried Chillies (soaked & de-seeded)
🌶️ 6-8 Bird's Eye Chillies
🌶️ 6 Red Chillies (de-seeded)
🌶️ 30g Belacan

Part 2: Prawn Broth
🍤 12 Prawn Heads & Shells
🍤 500ml of Water
🍤 500ml of Chicken Stock

Part 3: Laksa Gravy
🍲 3 Large tbsp of Laksa Paste
🍲 30g Dried Shrimp (Soaked & lightly chopped)
🍲 Prawn Broth
🍲 750ml Fresh Coconut Milk
🍲 Tofupok (Dehydrated tofu)
🍲 Fishballs

Assembly + Condiments
🍃 Bihun (blanched)
🍃 Bean Sprouts
🍃 Shredded Cucumber
🍃 Prawns
🍃 Fishcake
🍃 Finely sliced Daun Kesom
🍃 Finely sliced Bunga Kantan
🍃 Laksa Paste (on the side)

Sherson Lian kicked off his TV career with (and still is!) hosting ‘5 Rencah 5 Rasa’ on TV3 Malaysia, a cooking show that has been on air the past 10 years, with 24 seasons and 1500+ recipes and counting!
