Thai Green Curry with Homemade Curry Paste

I love Thai green curry with tofu from Thai restaurants. I've tried to make it at home in the past, but I found store-bought green curry paste is...not good. After some experimentation, I finally cracked the code!

This recipe is vegan if you omit the fish sauce (or replace with a vegan substitute.)

The Curry Paste:

-2 tbs minced green thai chilis (use serrano chilis if you can't find Thai chilis or use jalapeno if you can't handle spice well)
-1 stalk lemon grass (white part only)
-1 tbs galangal
-1/2 shallot
-6 cloves garlic
-1/4 cup minced cilantro stems
-1/4 cup thai basil leaves
-1 tbs fish sauce
-1 tsp cumin
-1 tsp turmeric
-1 tsp coriander
-1 tsp white pepper
-1 tsp kosher salt
-water as needed

Puree into paste. Sautee paste in 1 tsp coconut oil for a minute, then add:

2 Kaffir lime leaves
2 cups of coconut cream

and bring to a simmer.

MEANWHILE:

Start a pot of Jasmine rice. It takes about 25 min. start to finish to cook and this is exactly how much time you have left before your curry dish is finished.

BACK TO THE CURRY SAUCE:

Simmer the sauce for 20 min. total. Taste after 10 min for heat. If more heat is desired, add more whole chilis to the sauce (you can fish them out when you serve, presentation matters to you. same goes for the Kaffir lime leaves). Add 2-4 TBS sugar.

About 10 min into the sauce simmering process, in a separate vessel,

-1 tbs coconut oil
-1 cup sliced eggplant

Sautee until browned a little. Then add:

-1 cup sliced or shredded king oyster mushrooms

Sautee until the mushrooms wilt and the eggplant is cooked through. Your curry sauce should be done by now.

-1 cup snow peas
-1/2 cup sweet pepper
-the sauce
-3 cups cubed tofu

Simmer until the peas are cooked and the tofu is heated through. Taste the sauce and adjust as needed with:

-fish sauce
-sugar

At the end, add:
-fresh scallions
-thai basil
-cilantro
-lime juice
