Semolina Porridge (Creme de Semolina)
Semolina porridge (or crème de semolina) is a comforting hot cereal that reminds me a bit of grits, but has a finer texture and tastes like buttered noodles. Makes a great comforting hot breakfast, but you can really eat it whenever.
In a medium pot on medium-low heat, add:
1 cup water
2 cups milk
1 tbs butter
¼ tsp salt
Stirring occasionally so the milk doesn’t scorch, bring to a gentle simmer. Remove from the head, and add, whisking vigorously for 30 seconds:
1/3 cup semolina flour
Return to the heat and continue to whisk until the mixture comes to a gentle bubble. Turn down the heat to very low, cover, and let cook for 20 minutes, whisking every few minutes.
Let the porridge stand, off the heat, covered, for 2 minutes before eating.
You may add sugar, honey, parmesan, or any other seasonings to taste. I really like it just plain. Reminds me a lot of buttered noodles.
