Ingredients:
1 Can of rinsed black beans ( you can use 1/2 if you prefer less beans )
1 cup of ROASTED Corn ( Whole Foods and Traders both sell this ) thaw
1 cup of strained chunky salsa
1/2 of a roasted chicken ( Breast ONLY ) diced small
1/2 heaping cup of each Pepper Jack and Mexican Cheese ( you can use 1 cup heaping cup of either )
1/4 to 1/2 teaspoon of Southwest seasoning
I pack egg roll wrappers
Cup of water
Spray oil

Chipotle sauce ( a Must ) Tessamae also has a chipotle dressing that works well for dipping..

MIX all in a bowl…lay egg roll out in a diamond shape , fill with 2 heaping tablespoons ( enough to wrap without damaging egg roll wrapper )
Wrap as shown in video…seal with water on edges
Spray with a SMALL amount of oil
Spray bottom of foodie pan ( only a little is needed )
Put in eggs rolls, don’t crowd them
Set foodie or air fryer at 390 for about 20 minutes…watch that they don’t burn.
Flip halfway through
Remove carefully…enjoy! Thank you me later…LOL
