Mango Cheesecake Recipe
Ingredients
For the base:
* 1 cup crushed biscuits (e.g., digestive or graham crackers)
* 4 tbsp melted butter
For the cheesecake filling:
* 250g cream cheese
* ½ cup fresh cream
* ½ cup condensed milk
* 1 tbsp corn flour
* ¼ cup powdered sugar
* 1 egg
For the mango topping:
* 1 ripe mango (peeled and diced)
* 1 tsp corn flour
* 1–2 tbsp honey (to taste)
Instructions
1. Prepare the crust:
Preheat oven to 160°C (320°F).
Mix crushed biscuits with melted butter.
Press the mixture into the base of a springform pan or any baking dish.
Bake for 10 minutes at 160°C. Let it cool slightly.
2. Prepare the filling:
In a bowl, add cream cheese, fresh cream, condensed milk, corn flour, powdered sugar, and the egg.
Blend or whisk until smooth and creamy.
Pour this mixture over the cooled biscuit base.
3. Bake the cheesecake:
Bake at 160°C for about 45 minutes or until the center is set but still slightly jiggly.
Let it cool completely at room temperature.
4. Make the mango topping:
In a pan, add diced mango, corn flour, and honey.
Cook at 160°C (or on stovetop on low heat) for about 10 minutes until slightly thickened.
Cool the topping and spread it over the baked cheesecake.
5. Chill:
Refrigerate the cheesecake for at least 4–6 hours or overnight for best results.
