Ingredients:
- 2 medium-sized onions, thinly sliced
- 2-3 green chilies, finely chopped
- A handful of curry leaves, chopped
- 1 cup gram flour (besan)
- 2 tbsp rice flour (for extra crispiness)
- 1 tsp red chili powder (adjust to taste)
- 1/2 tsp ajwain (carom seeds)
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- Salt to taste
- Water (just enough to form a thick batter)
- Oil for deep frying

Instructions:

1. Slice the onions thinly and place them in a mixing bowl. Add the chopped green chilies and curry leaves to the onions.
2. To the onion mixture, add gram flour, rice flour, red chili powder, ajwain, turmeric powder, cumin powder, and salt. Mix everything together, ensuring that the onions are well coated with the flour and spices.
3. Gradually add a little water, mixing continuously to form a thick batter. The mixture should be just wet enough to hold together but not too runny. The onions will release some moisture, so don't add too much water at once.
4. Heat oil in a deep frying pan on medium heat. To test if the oil is ready, drop a small bit of batter into the oil. If it rises to the surface immediately, the oil is hot enough.
5. Carefully drop spoonfuls of the onion batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until the pakodas are golden brown and crispy, about 4-5 minutes per batch. Remove the pakodas with a slotted spoon and drain on paper towels to remove excess oil.
6. Serve the hot onion pakodas with chutney or tea.
