How to Make Brioche #Shorts

This brioche is made with a stiff levain that has been refreshed three times, three to four hours apart to bring it to a PH of 4.1-4.2. Which allows the oven spring to bring extraordinary volume to create a soft, subtle and sweet brioche that is far better than your standard brioche.

Ingredients:
100% flour
45% water
50% stiff starter
42% sugar
5% honey
52% egg yolk
50% Gay Lea Foods Bakers Gold
1.5% salt
