Mixing Panettone #Shorts

The panettone mixing process takes approximately 40-50 minutes. So you need to be very patient as it is a very long process.

Here are 3 key learnings that I've learnt from baking panettone.

1. Between inclusions it's important to fully incorporate the gluten. For example, add half the butter and wait until it's fully absorbed before adding the second half.
.
2. Smaller and larger batches will mix differently so you need to continue to scrape down the sides during the process.
.
3. If you're making chocolate panettone, stick the chocolate in the fridge for 20 minutes so that it does not smear in the dough.
