WFPB CHEESE Sauce! No Nuts! No Oil! 🧀 Vegan & EASY! Healthy Cauliflower Cheese Sauce!
Have you ever heard of cheese sauce made with cauliflower?? 🧀 Today we are making this healthy, vegan cheese-alternative! No nuts, no oil & no beans! Use it for mac n' cheese, for nachos, on top of roasted potatoes or even as a dip for steamed broccoli! Whole food plant based (WFPB) and easy to make, this is a delightful healthy vegan cheese sauce, made of vegetables! Enjoy!

🌱 Cauliflower Cheese Sauce Recipe:
1 small head cauliflower (about 4 cups chopped)
1/2 onion
2.5-3 cups* unsweetened soy milk (You can also use another plant milk or vegetable broth instead if you prefer)
1/2 cup nutritional yeast
2 tsp. miso paste
1/2 tsp. dijon mustard
1/2 tsp garlic powder (you can go up to 1 tsp. if, after tasting, you find it needs a bit more!)
1/2 tsp onion powder (you can go up to 1 tsp. if, after tasting, you find it needs a bit more!)
Optional: pinch of turmeric for color
Optional: add 1/2 tsp. salt (after tasting) if you think it needs a bit more saltiness
4 TBL tapioca starch (1/3 cup will give an even thicker, stretchier texture)
Directions: Bring a pot of water to a boil, add the cauliflower & onion and boil until softened (about 8-10 minutes). Drain the water and let the cauliflower mixture cool.
Blend cauliflower, onion and all remaining ingredients together until smooth. Taste and adjust seasonings if needed. I have started adding the tapioca starch *after* I blend and taste, because I found the tapioca starch can get in the way of my tasting and adjusting.
Then, heat the sauce on medium heat for 5-7 minutes, stirring continuously, until it thickens. Enjoy!
*Add more or less if needed (may depend on how "juicy" your cauliflower is once blended and/or how thick or thin you like your cheese sauce). 😊
