Watermelon RIND Curry! 🍉 WFPB, Vegan and Low-Waste Food Hack!

Did you know you can eat the rind of watermelon!? 🍉 Other than watermelon rind pickles, I had never heard of making it into any dish before! I love trying new recipes, so we had to give this one a go. Original recipes and links below! Hope you guys enjoy. 😊

(I did a combo of these 2 recipes as they're quite similar. I wanted to remove the outermost peel (the green part) (from My Heart Beet's recipe) and also boil the rind first (from Rooted In Spice's recipe). Also, I didn't have all the necessary spices, so I subbed ground cumin for cumin seeds, and fresh lemon juice for dried mango powder, but other than that, I mostly followed My Heart Beet's recipe for spices!)
