🌿 Ingredients
For the Kadhi:
Yogurt (curd) – 2 cups
Besan (gram flour) – ½ cup, 3, 4 tsp
Water – 4 cups (adjust for thickness)
Turmeric powder – ½ tsp
Red chili powder – 1 tsp
Salt – to taste
Hing (asafoetida) – a pinch
For Tempering (Tadka):
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Fenugreek seeds – ½ tsp
Dry red chilies – 2
Curry leaves – 8-10
Garlic – 4-5 cloves, chopped (optional)
Ginger – 1 inch, grated
Oil or ghee – 2 tbsp
For the Pakoras:
Besan (gram flour) – 1 cup
Green chilies – 2, chopped
Ajwain (carom seeds) – ½ tsp
Turmeric – ¼ tsp
Red chili powder – 1/4 tsp
Salt – to taste
Coriander leaves – chopped
Water – as needed
Oil – for frying
🍛 Instructions
1. Make the Pakoras:
Mix all pakora ingredients (except oil) in a bowl. Add little water to make a thick batter. Heat oil in a kadhai. Drop small portions of the batter and fry until golden brown. Drain on paper towels. Keep aside.
2. Prepare the Kadhi:
In a bowl, whisk yogurt and besan until smooth. Add turmeric, chili powder, salt, hing, and 4 cups of water. Mix well. Heat oil in a deep pan. Add mustard seeds, cumin, fenugreek seeds, and let them splutter.
Add dry red chilies, curry leaves, garlic, and ginger onion . Sauté for a few seconds. Pour in the yogurt-besan mixture. Stir continuously till it comes to a boil (to prevent curdling). Simmer on low heat for 30-40 minutes, stirring occasionally, until it thickens slightly and the raw taste of besan is gone.
3. Combine & Serve:
Add pakoras into the kadhi and simmer for 5-10 minutes before serving. Garnish with fresh coriander and a drizzle of ghee if you like. Serve hot with steamed rice or jeera rice.
