Jasmine pickers work in the dark — here's why!

Jasmine pickers work in the dark hours before sunrise. That’s when the blossoms hold the highest concentration of their delicate, intoxicating aroma. So farmers in places like Egypt and India head into the fields before the first light, gently handpicking the fragile flowers and filling baskets with blooms that will be turned into exquisite essential oil. Once the sun rises, the precious scent begins to fade… and with it, the oil’s value.

We’ve seen several books saying that you should harvest Jasminum grandiflorum and Jasminum sambac at different times. But we talked to the farmers, and they say no: both species are harvested at the same time.
