Flourless chocolate sponge or biscuit au chocolat is scrumptious and lighter than air. This is actually very much like a sponge cake, even though it has no flour. It’s really quite simple, rich and indulgent, it has been a classic way to end many a restaurant dinner for generations. You may need to make this chocolate sponge when you make chocolate yule log, or a cake layered with chocolate mousse, or buttercream, or chocolate ganache. I like this sponge cake because it has an airy texture and intense chocolate flavor.
