Super Simple Scones | No Equipment needed!

Welcome to 2-Minute Tuesday tutorial for super simple tender scones. They are lovely and fluffy on the inside and a little crunchy on the outside. You don't need any fancy equipment to make these. Just a bowl, your hands, and a round cutter. I pair this recipe with my homemade Chantilly Cream https://youtu.be/ZM0LEiVk56U and Raspberry Coulis (sauce) https://youtu.be/uznZwFXCqaE which I boil for longer to take it to a jam. All recipes in metric and US measurements.

RECIPE
450g (3 cups) Plain Flour
30g (2 Tablespoons) Baking Powder
1 teaspoon Salt
100g (1/2 cup) Sugar
70g (1/3 cup) Butter, unsalted - cold
250mL (1 cup) Milk

METHOD

Preheat your oven to 220C or 425F.

In a big bowl - combine all dry ingredients.

Cube your cold butter and add it to your bowl. Rub the butter into the flour until it resembles a course sand. It's ok if you leave a few small lumps.

Make a volcano shape out of your flour mix then put a well in the middle. Pour your milk into the well and take a fork to gently combine it until it looks like its mostly together. It'll look a little shaggy but you'll gather it all up with your hands into a nice disc shape.

Cover your clean bench with a fine sprinkling of flour and roll out your disc into a round or square shape about 1" (3cm) high. Using a round cutter, cut your scones until all of the dough is used. Or cut your square into 9 or 12 equal cubes.

With a pastry brush, coat the tops of the scones with your choice of milk, cream or egg wash.

Put scones in your oven and immediately drop your heat to 180C or 350F and bake for 17-23 minutes or until the tops are slightly golden.

Putting scones into a really hot oven prior to dropping the heat gives your baking powder a super lift!

Serve warm with homemade jam and cream.
