Hello and I am just thrilled that you joined us today! My name is Tammy, and I want to teach you how to cook like my mama. She was an amazing cook and baker and all of us kids can cook up some good food.
After many years of being complimented on my food, I decided to make some videos to teach my own children how to cook. I am a cancer survivor and wanted them to have a way to learn even if my life was cut short.
So Collard Valley Cooks began in the summer of 2017. Many of my older videos show just what an armature I was at making video content. However, after much encouragement from my viewers I created three cookbooks and have come a long way.
Today, our videos are in HD with more quality sound, and not only that I have learned so many tips from viewers just like YOU!
I really believe I am an even better cook thanks to you all and appreciate your encouragement. Being a YouTuber takes lots of patience, time, determination, thick skin and so much more, but the true joy comes from the stories from my viewers. Many of you mean so much to us.

NOW FOR THIS FAMILY RECIPE:
2 1/2 CUPS OF ALL PURPOSE FLOUR
1/2 CUP OF COCOA
2 TSP. BAKING POWDER
1/2 TSP BAKING SODA
1/2 TSP. SALT
1 STICK OF MARGARINE OR BUTTER
1/2 STICK OF SHORTENING
2 CUPS GRANULATED SUGAR
3 RAW EGGS AT ROOM TEMPERATURE
1 CUP OF EVAPORATED MILK
1/2 CUP OF WATER
2 TSP. OF VANILLA FLAVORING
Preheat the oven to 350 degrees.
In large separate mixing bowl combine flour, cocoa, baking powder, soda and salt. Whisk together well.
Use stand mixer and add butter, shortening, and sugar and mix well. Now add 3 eggs. Add 1 cup milk and water.
Start adding dry ingredients 1/2 cup at a time. Finish adding flour. Add vanilla.
Pour into well-greased cake pans. If using round pans use 3 pans. If you only have two reserve 1 cup of batter. (too much batter for 2 rounds)
Bake until set about 25-30 minutes. Watch close at end and take out when a toothpick comes out clean.
Very, very moist cake layers!

German Chocolate Frosting

4 EGGS
2 2/3 CUP EVAPORATED MILK
2 2/3 CUPS GRANULATED SUGAR
2 STICKS OF BUTTER OR MARGARINE
DASH OF SALT
2 TSP. VANILLA
14 OZ. BAG OF FLAKED COCONUT
1 1/2 CUPS CHOPPED PECANS

Crack eggs into a large microwavable bowl. Add evaporated milk and sugar and whisk well. Add melted butter (make sure it is not hot or it will cook the eggs). Whisk again and add a dash of salt. Add vanilla extract. Continue to whisk.
Put in microwave for 3 minutes. Take out and stir well. Return to microwave for 1 minute. Take out and stir well (it should be getting thick). It doesn’t look thick, just creamy looking. If you cook too long the mixture will curdle. 4-5 minutes should work!
Add flaked coconut and pecans and fold in the icing. Pour into shallow pans (like pie plates) to cool. This will yield enough icing to ice a large 3-layer cake.
NOTE: cool icing before icing cake
