Get and clean tomatoes. The kind you like is the best kind. "Roma" tomatoes are what people use for "classic" sauce. Get way more than you think you'll need. Way way more. Depending on hunger and size of tomatoes, about 10 tomatoes per person is a good start. If you're really hungry or want leftovers, get more.

The more you cut the tomato, the easier they will be to get through the processor. Some people dice and then cook their tomatoes a little to soften them. It's up to you. Pour castoff through process multiple times to get all the "Meat". It'll get "drier" each pass. 3 or 4 passes will do it.

A lot of good "meat" will stay stuck to the grates, so clean every now and then.

It really does look like we're going to get a lot of sauce, but most of it will boil off.

Pasta ingredient: 4 cups all purpose flour. 4 egg yolks, 6 egg whites

Make a big area in the middle. Way bigger than you expect. Eggs take space. Don't scratch the table with your fork while you slowly mix eggs and flour.
Pasta ball rolling. There's all kinds of techniques for this part. This way just looks the coolest and makes your forearms look stronger than they are. Do this for about 10 minutes and cause all the glutens to be where they need to be. Add in a little extra flour if too sticky after all the flour on the table has been picked up.

Is the ball springy? Yes? Sweet! Put it in plastic wrap and then into fridge for at least 30 minutes.

Marinara bonus ingredients: Bunch of parsley (washed), 7 garlic cloves (could have used more), 1 medium white onion. The amount of chop is up to you. You're the one cooking, do what you want.

Sautee onions and garlic and then add to sauce with parsley.

Add some salt and pepper if you like.

You don't have to use a wooden spoon to stir the sauce, it just makes me feel legit.

Meatbals: Ingredient list was based on what the group likes. Would have added a lot more garlic, parsley and onions. Salt and Pepper to taste, saltines were available (could have used breadcrumbs or panko), eggs, 3 pounds ground beef, 1 pound groud pork.

The amount of meatballs is up to you, just make sure you have enough for each person. Make the meatballs all about the same size so they are ready at the same time.

Pasta: Cut the dough into portions, work with one and keep the others covered up. If you don't have a rolling pin, a clean pop can or bottle of wine will work. A box of wine will not. Roll the dough as thin as possible. The noodles will get plump in the boiling water. Folding the dough a couple of times makes it easier to cut. Noodle size is personal preference. We like them a bit bigger.

If the noodles don't all look the same, tell people you're making your noodles "Artisanal".

Have a bowl of flour available for light dusting. This will keep the dough from sticking to table and easier to separate after cutting.

Cut rolled dough and put on plate. If you're limited on space, try to vary how you stack the noodles so they don't stick to each other too much. This is where lightly dusting the dough really helps out.

With only two pots in the cabin, I move the sauce to a smaller pot. This could have cooked down for a few more hours. Just depends on how thick you like your sauce. If the pot was bigger, would have put the meatballs in.

Fresh pasta doesn't take that long to cook. 3 to 7 minutes depending on noodle size and your preference. If you have a strainer, great! Otherwise, salad tongs are decent.

Get some fresh parmesan, a side salad and enjoy dinner. If you're with cool people...they'll do the dishes.
