One-Pot Chicken & Rice Dinner 🍚✨

Ingredients:
▫️ 550g bone-in chicken thighs
▫️ 1 tsp cumin powder
▫️ 1 tsp coriander powder
▫️ 1 tsp garam masala
▫️ 1 tsp turmeric
▫️ Salt & pepper to taste
▫️ 1.5 tbsp Greek yogurt
▫️ 1 tbsp almonds
▫️ 1 tbsp sunflower seeds
▫️ 2 cinnamon sticks
▫️ 7 cloves
▫️ 1 onion, chopped
▫️ 1 can lentils or cooked
▫️ 2 cups rice (rinsed)
▫️ 1.5 tsp chicken stock powder
▫️ Water as needed ( I used 4 cups)
▫️ Fresh coriander to garnish

Steps:
1️⃣ Marinate chicken with spices, yogurt, salt, and pepper. Set aside.
2️⃣ In a pot, toast almonds & sunflower seeds. Set aside.
3️⃣ Add oil, fry marinated chicken until golden. Remove and keep aside.
4️⃣ In the same pot, heat oil, add cinnamon sticks, cloves, and chopped onion. Sauté until soft.
5️⃣ Add lentils, rice, stock powder, and give it a quick fry.
6️⃣ Pour in water, leftover marinade, and gently mix.
7️⃣ Place chicken on top, cover, and cook on low heat.
🔸 Pro Tip: Place a flat pan under your pot to prevent burnt rice and help it cook evenly.
