Snowflake pattern tutorial- how to score your bread

Snowflake pattern to match the winter season. It is super easy to do if you mark the outline (12 guiding marks for petals and their edges, circle for the diameter of the snowflake). You can follow the tutorial exactly or improvise and do it as simple or as ornate as you want.

Bred specs: This is a 85% @kingarthurbaking bread and 14% all purpose flours and 1% @arrowheadmills rye flour sourdough bread 80% hydration enriched with 3% butter.

2.5hr autolyse. Add 100% hydration starter, then salt and melted butter after 30 min. Hand mix for 3-5 min to incorporate the salt and butter. Cover and leave it on the counter or wherever it’s warm (could even put in the microwave with the door shut if your kitchen is cold or if you don’t have a professional proof we (which I don’t). 60 min later do 1 stretch and fold, followed by 3 coil folds at 45-45-60 min apart. Shaped after about 7ths proofing (the time starts after you add starter), then kept in banneton for 45min before cold retard for 14hrs. Scored with @wiremonkeyshop UFO lame and baked in @challengerbreadware preheated for 1hr at 500F, then lowered to 430F to bake covered for 20 min, then removed the lid, lowered temp to 400F and finished baking for 20 min.

You can also bake it in @lodgecastiron Dutch oven at 500F covered for 20 min and at 425F uncovered for 20 min.
