The best Baba Ganoush - Arabic Eggplant Dip

If you’re an eggplant fan then Baba Ghanouj is the perfect dip for you. Baba Ghanouj is an eggplant based dip of Arabic origins were Baba means father or Daddy and Ghanouj means coquettish and pampered. So lets get started and make us some flirty, pampered daddy dip.

INGREDIENTS:
• 1 large eggplant
• 1 big garlic clove
• 2 heaped table spoons full fat Greek style yogurt
• 3 table spoons tahini
• Salt to taste
• Lemon juice to taste
• Olive oil to serve
• Pomegranates, Paprika, Zaatar, parsley to decorate – all optional

TIPS
For a super smoky version cook 90% of your eggplant directly on the stove top and the last 10% in the oven.
For a less smoky version cook your eggplant fully in the oven then char quickly directly on the stove top.
In all cases make sure you’re eggplant is soft and so cooked fully all the way through.
