It really comes down to practice, and making fighting second nature. You will eventually be able to stay calm enough to think during a fight, but until that point you must train enough so that fight techniques come naturally. Some drills involve shadowboxing, padwork, and sparring. Just like walking once was a challenge for you, the more you practice for a fight, the easier it becomes!
