PizzaMaster® Training and Support Video 6: BAKING GUIDELINES

With so many different types of pizza businesses, from grocery stores to pizza shops, using PizzaMaster ovens, we want be sure you can optimize your use of the oven. In this video we’ll share baking guidelines and tips to help you get the most from your PizzaMaster.
First, when you’re baking pizza you should always open the flue. There is a handle on the left front of the oven that opens the flue vent in the left rear corner of each oven deck. If the handle is in, the flue is closed. If it’s pulled out, the flue is open. The pizza dough and ingredients will emit moisture, so leaving the flue open will allow that moisture to escape up through the chimney stack. The interior of the oven can stay dry, ensuring you end up with a crispy crust.
Next, you should never set the top heat lower than three. It’s a powerful oven, and you want to harness that power. The bottom heater may be set higher, the same, or lower than the top heat, depending on your baking needs. For example, pan pizzas require a higher bottom heat. The third heat zone, in the front, should be set in relation to the top heat, usually plus one or two. More specific guidelines for different types of bakes can be found in your owner’s manual on page 36, and we offer further tips in our Quick Start Guide video and our Front Heat Zone video.
Another important tip is to load and unload your pizzas in a regular and repeatable pattern. If you load from left to right, you need to unload the same way, and then begin again from the left for the next round of pizzas. If you overuse a ‘favorite spot,’ it will make it harder for that spot to recover heat. Utilizing the whole hearthstone also helps guard against the creation of hot spots in underused areas. A regular, repeatable loading process ensures your baking results will be consistent and allows you to reach max capacity.
