SUNDAY
☆ apple + sweet potato crisp →
- cut up a bunch of apples & sweet potatoes into large chunks
- steamed the sweet potatoes on the stove until cooked through but still firm
- melted vegan butter/shortening on the stove with brown sugar & pumpkin pie spices + a lil salt
- once melted together added granola & crushed up pecans
- layered butter/sugar/granola mixture over cut-up apples & sweet potatoes
- put in the oven @ 350 for about 30-40 min. or until topping becomes good n crunchy ? sorry such a vague time i can't remember exactly how long i kept it in!

☆ chinese food leftovers → vegetarian chicken chow mein from China Chef! (Fresno, CA)

MONDAY
☆ smoothie → oat milk, hemp seeds, spinach, frozen banana, frozen blueberries, & peanut butter
☆ matcha → matcha powder + water + stevia drops, then mixed with oat milk
☆ chinese food leftovers
☆ pesto noodles →
sauce = sauteed onion+garlic, broccoli & tomato, leftover pesto, pasta water until a nice creamy sauce forms

TUESDAY
☆ strawberry toast → toast, pb, strawberries, cinnamon
☆ salad leftovers → leftover dressing, veggies, & black beans
☆ chickpea veggie curry simmer sauce w/ rice

WEDNESDAY
☆ birthday cake granola
☆ portabella jerky
☆ curry leftovers

** we just used cucumber instead of pickles

THURSDAY
☆ banana nut overnight oats → basic overnight oats recipe + mashed banana, walnuts, pumpkin pie spice, peanut butter
☆ salad leftovers
☆ walmart Great Value brand burger patty + FYH American cheese

FRIDAY
☆ overnight oats leftovers
☆ mushroom hummus toast → sourdough toast, spicy hummus, sauteed mushrooms+onions, tahini, balsamic glaze)
☆ airfryer nachos lol → air fryed the chips + cheese for a couple min. then added beans & put them back in for a couple more min. then added toppings
☆ apples & chocolate pb → dip = melt chocolate into pb until smooth (microwave in 20 sec intervals), then add milk lil bits at a time until it thickens up!

SATURDAY
☆ apple pb waffles → frozen waffles, apple sauce, pb, cinnamon, maple syrup
☆ curry leftovers + sweet potatoes → sweet potatoes in the air fryer with olive oil & seasonings (garlic + onion powder, curry powder, tumeric, salt+pep)
☆ tofu veggie pho → vegan pho base from RN Market (Fresno, CA), broccoli, carrots, mushrooms, pre-frozen/pressed tofu
fried tofu = pre-frozen/pressed tofu tossed with corn starch + ap flour, then fried in vegetable oil, turned over as each side browns
toppings = bean sprouts, lime (didn't have fresh cilantro :-/)
☆ milkshake/smoothie thing → hagen daas ice cream, peanut butter, oat milk, frozen banana
