Hi guys! Todays vlog is a mixture of my too fav hobbies: reading + eating. Check out what books I've been loving + a new recipe I concocted!

RECIPE
One large eggplant
Cut up in 1/4 slices
Sprinkle with salt
(After 10 mins dab with paper towel to get out excess moisture)
In pan brown sausage (I used 3 mild italian turkey) when done add sauce to the pan an put on low
For eggplant coating get 2 plates
In one plate Beat 2 eggs
Other plate add 1/2 cup parm 1/2 almond flour
Add salt, pepper, italian seasoning
Dip each piece egg mixture then arrange in baking dish
Sprinkle with garlic powder, spray with cooking spray
Bake at 425 for 15 mins then flip
sprinkle with garlic powder, spay with cooking spray
+ bake another 15 mins
Then add sauce/meat mixture over the eggplant and top with shredded mozzarella
Broil for a few minutes or until bubbly!
