RECIPE:

Gambas al Ajillo (Serves 4)

INGREDIENTS

1 lb. large shrimp, shelled and deveined
⅓ cup good olive oil
8-10 garlic cloves, thinly sliced
1 small arbol chile, crushed
½ cup white wine
2 tablespoons sherry
Juice of half a lemon
½ cup parsley, minced

Crusty grilled bread for serving

DIRECTIONS

Heat the oil over medium high heat in a large shallow skillet. Add the garlic and saute for a minute, stirring constantly. Add the chiles and cook until the garlic is tender and is golden but not browned, about 2 minutes. Add the shrimp and coat in the oil. Allow to cook until the shrimp is pink, about 3 minutes. Add the white wine and sherry and bring to a boil to cook off the alcohol. Add the lemon juice and parsley and cook for another minute. Serve immediately with the bread.
