No Bake Rainbow cake | Vanilla Cake base | Vanilla buttercream Frosting
No bake rainbow cake with vanilla buttercream frosting
Vanilla Cake Ingredients:
6 cups all purpose flour
3 3/4 cups sugar
6 large eggs
3 tbsp baking powder
1 1/2 canola oil
3 cups evaporated milk
3 tsp vanilla extract
3/4 tsp salt
1 1/2 tsp each food color: green, blue red, violet, yellow and orange
Vanilla Buttercream Frosting ingredients:
1 1/2 cups unsalted butter/margarine(softened but still cold)
1 1/2 cups shortening
450ml condensed milk(chilled overnight)
3 tsp vanilla extract
decorations:
marshmallows
jelly beans
gummies
doughnut
sprinkles
Procedure:
A. Vanilla Cake
1) Bring water(1 liter) to a boil
2) In a bowl combine eggs and sugar. beat until slightly thickened
3) Add flour, milk, oil, baking powder, salt and vanilla extract
4) Mix for another 2-3 minutes or just until the batter is smooth and creamy
5) Divide the batter into 6 equal parts
6) Add 1 1/2 tsp food color to each cake batter. Mix until combined(do not overmix)
7) Pour the cake batter into the cake pan with parchment paper(grease sides too)
8) Tap few times to release air bubbles
9) Steam for 20 min. over low heat. *Don't forget to wrap the lid with clean cloth to prevent the water from dripping into the cake
10)Check the cake after 20 min. with toothpick and if it comes out clean the cake is cook. *but if the cake is stil wet adjust the heat to med-low heat and check every 5 minutes.
11)Cool in a pan for 5 minutes
12)Gently peel the parchment paper off and cool completely
B. Vanilla Buttercream Frosting
1) Combine butter and shortening. Beat for 5 min. until fluffy
2) Add condensed milk and vanilla extract. beat for another 7-9 minutes
C. Assemble Cake
1) Dab 2 tbsp of frosting
2) In order: Violet, blue, green. yellow, orange and red. Spread frosting on each layer.
3) Crumb Coat: cover the cake with a thin layer of frosting
4) Chill for 15-30 min. or until frosting is firm
5) Dab a generous amount of frosting and coat the whole cake
6) Smooth out the frosting
optional:(for design)
add food color to the remaining frosting for the rainbow frosting design
cut the marshmallows and dip into the sprinkles
