Betty's Favorite Scalloped Cabbage

Betty demonstrates how to make her Favorite Scalloped Cabbage. This is a casserole you might enjoy around St. Patrick's Day.

Favorite Scalloped Cabbage

1 medium cabbage, chopped in pieces
1 teaspoon salt
6 slices crisp bacon, crumbled
1 tablespoon extra-virgin olive oil
2 tablespoons finely-chopped green pepper
1 cup (4 ounces) finely-shredded sharp Cheddar cheese
2 ounces diced pimientos (from a jar)
White Sauce (recipe below)
½ cup soft breadcrumbs
1 tablespoon melted butter
cooking oil spray for greasing baking dish

Cook cabbage in boiling water that has been salted with 1 teaspoon salt. Cook until crisp-tender, about 10 minutes. Drain well and set aside. Make White Sauce (from recipe below) and set aside. Heat 1 tablespoon olive oil in a small skillet. Add 2 tablespoons finely chopped green pepper and sauté until tender. Set aside. Spoon half of cooked cabbage into a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Sprinkle with crumbled bacon, ½ cup shredded cheese, and pimiento. Spoon on remaining half-cabbage and sprinkle with remaining ½ cup shredded cheese. Pour white sauce over top. Combine soft breadcrumbs with melted butter. Mix well and sprinkle over casserole. Bake, uncovered at 375 degrees (F) for 15 to 20 minutes.

White Sauce:

2 tablespoons butter
2 tablespoons flour
1 cup milk
¼ teaspoon freshly-ground sea salt
¼ teaspoon freshly-ground black pepper
¼ teaspoon ground paprika

Melt butter in heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until thick and bubbly. Stir in salt, pepper, and paprika.
