GIANT Fish Head Soup! Clean & Cook (Cubera Snapper Jaw Mount)

Recently we caught 2 giant Cubera snappers down in the Florida Keys. I decided to make a huge batch of fish head soup, as well as make a Cubera snapper jaw mount out of the bones. Cubera snapper have huge fang like teeth, and are the biggest snapper species in the world. They make for some of the coolest jaw mounts of any fish! Making fish head soup is actually pretty easy, healthy and is a good way to use all of the fish. To make fish head soup follow the directions below.

1)Descale, clean and remove gills from fish head. Example in video.
2) Add head, collar and carcass to big pot. Fill with enough water to cover all bones and head. At this point you can season your fish stock with herbs and spices if you like.
3) Bring to boil, then simmer for 45min.
4) Remove all bones and fish from pot. Pick away the clean white parts of fish and set aside. Save bones if you wish to make a head or jaw mount.
5) Strain fish stock through sieve, to obtain clear stock.
6) Clean pot, heat olive oil over medium heat. Add diced onions, carrot, celery, chillis if you like heat. You can play around here and add peppers too. Cook until translucent. Add garlic cook 15 seconds. Add diced tomatoes. Cook tomatoes until tender.
7) Add fish stock to pot and any dry spices you like, inlcuding fresh herbs.
8) Cook 15 min add fish back in and Nappa cabbage. Heat through. Garnish with fresh parsely.
