DEEP SEA Snapper & Grouper! Catch Clean Cook- Fish and Chips! (FLORIDA Keys)

My buddy Capt. Ryan from Good Karma Sport Fishing invited Brook and I down to Tavernier Creek in the Florida keys to do some bottom fishing in the Florida Keys. The keys had been closed to visitors for months and finally opened up June 1st, so we were stoked to fish! We spent the day snapper and grouper fishing on the reef and drift fishing out deep. Our target species were mutton snapper, mangrove snapper, yellowtail snapper and black grouper. These are some of the best tasting fish in Florida and Capt. Ryan specializes in these reef fish. I made homemade beer battered fish and chips when we got back and it was some of the best fried fish we ever ate! You can find the recipe below!

Here’s the recipe!

1. Season fish with 3:1 ratio of flour to corn starch. Season with garlic powder, salt , pepper.
2. For the beer batter, mix about 1:1 ratio of beer to flour, 2tbsp of baking powder, batter should be thinner than pancake batter. Should stick to fish but run easily.
3. Dip fish into batter let some batter drip off. Fry in 375-400 degree peanut, canola or vegetable oil in heavy bottom pot or cast iron pan. Use at least 2inches of oil or thicker than fish.
4. Fry for around 7min or until golden brown.
5. Tartare sauce recipe as follows, mix 3 parts sour cream to 1 part mayo. Mince 1 pinion and equal part dill pickle. Add to sour cream mixture, add black pepper to taste.
