I made demi baguette.

1st Dough:
50% Organic Artisan Bakers Craft Plus (Central Milling)
50% Electra Light Flour (Central Milling)
85% Hydration
20% Sourdough Starter / Levain
2% Salt
Bake (preheated oven) 490F for 40 minutes, load the dough, bake for 15 minutes. take out the lid, bake at 450F for another 15 minutes.
2nd Dough:
50% Organic Artisan Bakers Craft Plus (Central Milling)
50% Electra Light Flour (Central Milling)
89% Hydration
20% Sourdough Starter / Levain
2% Salt
Bake (preheated oven) 490F for 40 minutes, bake with the lid on for 15 minutes. take out the lid, bake at 450F for another 15 minutes.
