Making Artisan Bread and Warm Breakfast

A typical day to enjoy the winter. I start with warm breakfast and continue
my day and make bread for a friend.
Pan de Gallego
250 grams flour (King Arthur Bread Flour & All Purpose flour)
185 grams water
5 grams salt
1.5 grams instant yeast

p.s. if your not comfortable with high hydration please start on low hydration (60%-80% hydration)
Bake @ (preheated) 490F w/ lid 18-20 minutes, 450F w/o lid 18-20 minutes
(kindly adjust how you like your bread to be)
Ginger Bread Cookies:
All purpose flour 2 cups
Cocoa powder 1/2 Tbsp
Ground ginger 2 tsp
Ground cinnamon 1 tsp
Baking soda 1/2 tsp
Butter (room temp) half cup
Granulated sugar 85 grams
Egg 1
Molasses 75 grams
Salt 1/2 tsp
