Soft bread loaf with sourdough discard:

300 grams bread flour
60% hydration [milk & vegetable oil] (kindly adjust depending on your flour)
2% salt
10% sugar (kindly adjust, depending on how you like it.)
35grams softened butter
sourdough discard
instant yeast
tangzhong (50 grams bread flour, 50 grams milk)

Pan size - 8.5 x 4.5

bake @ (preheated) 330F 20 minutes, 325F 10 minutes
Whole Wheat Bread:

250grams of flour
85% hydration (water & olive oil)
2% salt
biga (20 grams of bread flour, instant yeast (pinch), 10 grams water)

Bake @ (preheated) 500F w/ lid 20 minutes, 450F w/o lid 20 minutes
(kindly adjust how you like your bread to be)
