We’re back with our Food Editor Silvana as she shares an extra special family recipe: her mum’s fresh cavatelli pasta with a steak tomato sauce, with a bit of help from her mum on the phone and daughter Cassia in the kitchen.

Silvana grew up in Derby but her parents are from Puglia in Southern Italy, where this dish originates. The technique of making the pasta and the sauce recipe have been passed down through the generations from Silvana’s granny.

The pasta uses just 3 ingredients: semolina, salt and water, which makes it suitable for vegans. It’s really simple to make and shape too, making it great if you’re a beginner and never tried making your own pasta before or want to get children involved. The little hollows in the pasta hold the tomato sauce, which is rich in flavour from the steak. Traditionally the meat is eaten after the pasta as a main course with potatoes and salad.

Ingredients:
400g Essential Semolina
1 tsp salt
200ml lukewarm water
For the sauce
230g Essential British Beef Rump Steak, trimmed of fat
2 tbsp chopped flat leaf parsley
2 cloves garlic, finely chopped
2 tbsp freshly grated Pecorino or Parmigiano Reggiano, plus extra to serve
1 tbsp Italian olive oil, plus a little extra to serve
1 echalion shallot, finely chopped
2-3 sprigs rosemary or oregano
680g jar Essential Passata
Chilli flakes, pinch (optional)
