Full written Recipe - Pressure Cooker Desi Red Sauce Pasta
Prep time: 5-10 minutes
Cooking time: 10-15 minutes
Serve: 4-5 people
Ingredients:
ONION | प्याज़ 2 SMALL SIZED.
GREEN CHILLI | हरी मिर्च 2 NOS.
GARLIC | लहसुन 12-15 CLOVES
TOMATO | टमाटर 3 NOS.
CARROT | गाजर 1 MEDIUM SIZED.
FRENCH BEANS | फ्रेंच बींस A HANDFUL
CAPSICUM | शिमला मिर्च 1 MEDIUM SIZED.
SWEET CORN | स्वीट कॉर्न 1/4 CUP
OIL | तेल 2 TBSP
CUMIN SEEDS | जीरा 1/2 TSP
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
CORIANDER POWDER | धनिया पाउडर 1 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
SALT | नमक A PINCH
KETCHUP | कैचअप 3-4 TBSP
LIGH SOY SAUCE | लाइट सोया सॉस 1/4 TSP (OPTIONAL)
PASTA | पास्ता 200 GRAMS
HOT WATER | गरम पानी AS REQUIRED
SUGAR | शक्कर A PINCH
OREGANO | ऑरिगेनो 1/2 TSP
CHILLI FLAKES | चिली फ्लेक्स 1/2 TSP
FRESH CORIANDER | हरा धनिया A HANDFUL
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL
Method:
Add the onions, garlic & green chilli into a chopper & finely chop them, transfer into a bowl.
In the same chopper add the tomatoes & chop them finely too.
Cut the vegetables into small dices, you can also add more veggies of your choice.
Set the pressure cooker over high flame & let it get hot, then add the oil & let the oil heat up as well.
Add the cumin seeds & let them crackle, then add the chopped onion mixture & cook over high flame until the onions turn slightly light golden brown.
Then lower the flame & add all the powdered spices along with a splash of hot water, still well & cool the spices over high flame for 1-2 minutes.
Next, add the tomatoes along with a pinch of salt, stir well & cool the tomatoes until the oil separates.
Add ketchup, light soy sauce, veggies & preferred choice of paste & gently stir & mix everything.
Further add hot water, the water should completely cover all the added ingredients, do not add a lot of water.
Stir well & taste, add salt if required then put the lid on & pressure cook the pasta over medium flame for just 1 whistle (you can cook for another whistle if the first one goes off too early).
Then switch off the flame & let the cooker depressurize naturally.
Once depressurized, remove the lid & gently stir the pasta.
Give it a taste, adjust salt again if required & lastly add sugar, oregano,chilli flakes, fresh coriander & spring onion greens, stir well. You can also add processed cheese as required at this stage & mix it, I prefer to add it while serving.
Your delicious & super quick Desi Red Sauce pasta in the pressure cooker is ready.
