Kanji is a superb fermented drink to boost digestion and also keep the seasonal allergies at bay. It’s a tangy spring season drink made by fermentation of black carrots ( native to northern part of India ) for 3-5 days .

It’s super simple and takes less than 10 min to put together. And then left with nature to work out magic of creating an antioxidant that helps you in relieving cold , cough , asthma, thyroid and indigestion .

Ingredients:
Black carrots/ Carrots : 1/2 Kg
Beet root : 1/2 medium sized
Black salt : 1 tablespoon
Iodised salt : 1 tablespoon
Rai : 2 tablespoon
Black pepper powder: 1 tablespoon
Heeng / asafoetida : 1/4 teaspoon
