MUSHROOM BARLEY RISOTTO
INGREDIENTS (Serves 1)
Boiled Barley – 1 Cup
Mushroom slices – 1 Cup
Chopped Spinach – 1 Cup
Ghee – ½ tsp
Chopped Onion – 1 medium
Fine chopped Garlic – 3 cloves
Chilli flakes – ½ tsp
Salt – To taste
Black pepper powder – ½ tsp
Thin Homemeade coconut milk – 1 cup
Lime juice – To taste
PREPARATION:
-Soak the Jau ka dalia for 3-4 after washing thoroughly. You need to use ½ cup uncooked Jau Dalia
- After soaking it will almost double up in sixe
-Strain the excess water and add it into a pressure cooker
-Add 1 ½ cup water and salt ( as per taste) and pressure cook it for only 2 whisles and let the pressure release
-Meanwhile in a pan add Ghee and add Chopped garlic
-Once it turns translucent add the chopped onion and cook till they change colour.
-Add Mushrooms and turn the flame high . Sautee the mushroom till they turn golden and then add Spinach.
-Add salt , chilli flakes and black pepper and let it cook for a minute or 2 on low flame.
- Now add coconut milk and cook it on low flame till it boils
-Add the cooked Barley Dalia and let it cook for 5 to 7 minutes on medium high flame.
- Remove when the desired consistency is achieved and serve hot with fresh lemon juice and top with some caramalised Mushroom
