Pasta Grannies enjoy homemade pizza from Ischia!
Giocanda and Bartolo live on Ischia, and their vegetable market garden has the most wonderful views. It's a great spot for Sunday lunch, which for them is Neapolitan style pizza. Bartolo's recipe for pizza dough is, for every kilo of flour use:
about 500ml tepid water (probably a bit more, he does it by eye and feel)
35ml extra virgin olive oil
6g fresh yeast or 50g of sourdough starter (make your yeast work hard, don't be too generous with it)
tablespoon of salt
Leave to prove once for several hours, before rolling it out.
