Beshbarmak | Kazakh Meat Dish

This is a traditional Kazakh meat and pasta dish. Elegant in its simplicity and super delicious. It is a centrepiece of any Kazakh celebration and a must if you are hosting guests.

500 g - 2 kg (1.1 - 5 lbs) of meat, lamb or beef
1 tbsp salt
2-3 large potatoes, peeled and cut in medium size chunks
1/2 onion, cut in strips or rings

2 cups all purpose flour + extra if needed (I added another half a cup)
1/2 tsp salt
1 egg
1/2 cup water

Place the meat in a large pot and cover with water, turn the stove on medium - medium high heat and start cooking the meat. You can add salt at the very start of cooking.

Peel and cut the potatoes into medium size pieces, put them in a bowl of water and leave till later.

When the meat starts boiling, reduce the heat to medium-low, remove the foam, if there is any, floating on the top of water. Let the meat simmer for about 2 hours (I had about 2 kilograms of meat in the video). Your meat can take less time to cook, if you use a smaller piece.

Now, make pasta. Put flour, salt, egg and water into a bowl and make a soft dough, adding extra flour if needed. The dough is ready when it stops sticking to your hands. Divide the pasta dough into two discs, slightly flour them, cover them with a bowl and leave for 10-20 minutes.

About a half-an-hour before the meat is ready, cut the onion, place the onion in a bowl and cover with the meat broth, put aside.

Roll the pasta out into a large circle, 1-2 mm thin. Add a sprinkle of flour here and there if the pasta keeps sticking to the table top or the rolling pin. Let it rest from 10 to 20 minutes.

Place the potatoes into the pot with meat, increase the heat to medium and boil potatoes for about 20 minutes, until they are soft and cooked. Take potatoes and meat out of the broth.

Then, cut the pasta sheet into palm-sized sheets. Increase the heat to medium-high and cook the pasta by adding each piece separately and immersing it fully in the broth before adding the next sheet. Boil pasta for about 10-11 minutes and get it out on a plate, when it is ready.

Assemble the beshbarmak as shown on the video.
