Sweet Potato Souffle

This is a great desert for the Thanksgiving and Christmas Holiday dinners.
Here's the recipe:
6 cups of cooked sweet potatoes (4 very large or 6-8 medium) sliced and then mashed
1/2 cup of butter (1 stick), melted
2 large eggs
1 cup sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup evaporated milk
Topping:
1 1/2 cups pecans
1 cup light brown sugar
6 tablespoons cold butter
3/4 cup self-rising flour
Combine the topping ingredients in the Food processor. Spread over filling.
Bake in 9"x13" Pyrex dish that has been well buttered.
Bake at 350 degrees for 40 minutes or until lightly browned on top.
Ten to 14 servings
