🥣BAKE WITH ME 6 FALL DESSERTS - Cranberry, Apple, Pumpkin, Caramel Corn

Here are some of our favorite fall desserts with a couple new ones for good measure. I'm pretty sure you'll find something you can't resist baking!

CRANBERRY BARS w/ CREAM CHEESE FROSTING https://youtu.be/FAqlClNYtTM

CRAN-APPLE STRUDEL
2 c. flour
1 c. brown sugar
1/2 c. oatmeal
dash of salt
3/4 c. melted butter
Mix and press onto jelly roll pan (10x15), reserving 3/4 c. for topping

3 large apple, chunked
2-3 cups cranberries, whole
1 c. white sugar
2 c. water
Cook until fruit is soft. Add 1 T. cornstarch and stir hard and cook until slightly thickened. Cool somewhat.

Place fruit mixture on crust. Cover with reserved crumbs and bake at 275 degrees F for 1 hour.

CRANBERRY CAKE w/ HOT CARAMEL SAUCE
Mix by hand 1 c. sugar, 2 T. melted butter and 1 egg. Stir in 1/2 c. milk, mix well. Dump in 2 c. flour, 2 tsp. baking powder, pinch of salt and fold until well combined. Add 2 c. fresh or frozen cranberries, whole. Mix and place in greased 9 inch pie plate. Bake at 375 degrees F for 35-45 minutes. Mine is done closer to 45 minutes. Serve with caramel sauce if desired.

1/2 c. butter
1 c. sugar
1 c. whipping cream
Cook slowly in microwave until sugar dissolves. Sauce does not thicken.

PUMPKIN PECAN DESSERT https://www.shugarysweets.com/pumpkin-crunch-cake/

MICROWAVE CARAMEL CORN
1 c. brown sugar
1/4 c. corn syrup
1/8 tsp. salt
1 stick butter
Bring to a boil in microwave and then boil for 3 minutes stirring after each minute. Microwaves vary so watch everything closely. Sugar can burn fast!!
Add 1/2 tsp. baking soda and 1/2 tsp. vanilla and stir hard. This will foam up.

Place 16 cups popped corn in greased paper grocery bag. Pour caramel over and shake well to coat. Microwave 1 minute, shake and check. Microwave 1 minute, shake and check. Microwave 30 seconds, shake and check. May need one more 30 second round, but watch closely as it can burn quickly. Pour on foil or waxed paper and allow to cool. Break apart and eat while watching football.
