R E C I P E:
1 + 1/4 cup all purpose flour
1/2 cup rolled oats
1/2 cup almond flour
3/4 cup oat flour
3 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp ginger spice
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup coconut sugar (you can use any type of sugar)
1 flax egg (2 tbsp ground flax seeds + 3 tbsp water)
2 tsp vanilla extract
1.5 cups pumpkin puree
3 tbsp applesauce (Or sub for more pumpkin puree or mashed banana)
1/2 cup almond milk (or milk of your choice)
1/4 cup vegan chocolate chips + more for topping

- Add all dry ingredients into a bowl and stir until well combined
- In a separate bowl add all wet ingredients (except for the milk) and stir until well combined
- Then add the wet ingredients to the dry and fold gently. Add in the milk.
- Once everything is well combined fold in your chocolate chips. Then transfer into a nonstick or lined loaf pan
- Bake at 350F for 1 hour covering halfway so it doesn't burn!
- Allow loaf to cool completely before slicing and serving!
