Stracciatella Soup - Italian Egg Drop Soup

Stracciatella soup is an easy and comforting recipe that you can put together in just a matter of moments. This dish, also known as Italian egg soup soup, uses just a handful of ingredients that you probably have on hand already in your kitchen. Ingredients:
-6 cups homemade chicken stock
-4 eggs
-1 1/2 tablespoons semolina flour (optional)
-1/3 cup grated Parmigiano-Reggiano cheese
-1 cup densely packed baby spinach
-1/4 cup Italian parsley
-1/4 teaspoon crushed red pepper flakes
-1 tablespoon extra virgin olive oil
-salt and pepper to taste

Directions:
-Preheat the homemade chicken stock over medium high heat. While the stock comes up to a simmer, this is more than enough time to prep the rest of the ingredients.
-Crack 4 large eggs into a bowl.
-Grate the Parmigiano-Reggiano cheese over top of the eggs.
-If using the semolina flour, add to the egg and cheese mixture. This will provide more density to the eggs and make for a heartier soup.
-Add salt and pepper to taste, and beat the egg mixture with a fork or a whisk until fully combined.
-Chop the Italian parsley, add to the egg mixture, and mix until fully incorporated. This is done after beating the eggs as herbs are very delicate.
-Once the chicken stock reaches a simmer, turn the heat down to medium low. Use a spatula to stir the stock in a circular motion and slowly pour in the egg mixture. Continue slowly stirring until the eggs have broken up and look like little rags. The name Stracciatella actually means torn rags!
-After one minute, turn off the heat. Add the baby spinach. You can leave the spinach whole or cut into strips.
-Add the crushed red pepper flakes, taste for salt and pepper, and grate a small amount of cheese over top of the soup. Garnish with a small drizzle of olive oil.
-Serve and enjoy!
