Stracciatella "Italian Egg Drop Soup"

This soup is fantastic winter soup that will cure everything from the Keto Flu to a hangover and anything that ails you. There are so many versions of egg drop soup but this one is my favorite because it has the salty nutty cheese and the earthy spinach and scallions. Though even my version is not traditional it does have all the classic elements of this low carb soup.

Super easy to make and can be prepared in a matter of minutes. It really is a magic elixir with healthy ingredients like garlic, shallot, turmeric and plenty of salt to replenish those electrolytes. Depending on the broth you chose you may want to add some additional pink salt and I also recommend an extra pinch of crushed red pepper flakes.

“Italian Egg Drop Soup”

Ingredients:

4 Eggs
6 cups chicken broth
⅓ cup fresh grated pecorino Romano
½ cup thinly sliced baby spinach
2 tablespoon Pork King Good Crumbs https://amzn.to/2LR1tGt
2 tablespoon sliced scallions
2 tablespoon olive oil
2 tablespoon diced shallot
1 tablespoon minced garlic
2 tsp Italian seasoning (spiceology)
½ tsp turmeric

Instructions

In a mixing bowl crack eggs and then add Italian seasoning, Pork King Good Crumbs and pecorino Romano...you may use Parmesan if you must but please not anything out of a green shaker, you’re better than that. Whisk all ingredients until smooth. Set aside.

Next in a medium saucepan add olive oil, diced shallots and minced garlic. Stir over medium heat until shallots and garlic are soft but not caramelized.

Add chicken broth to the pan and bring to a simmer just below a boil.

Once the broth reaches a simmer add scallions and thinly sliced spinach and stir for just a few seconds.

Finally slowly pour in the egg mixture while whisking until the mixture is all mixed into the broth

The ribbons of egg will rise to the top and should be stirred each time before ladling the soup out to serve.
