Sauté Mushrooms
- 1 Cup organic Mushrooms (Your favorite of – Portobello, porcini, chestnut, shiitake, girolle, or oyster – slice any larger ones small)
- Heat Coconut or Olive Oil in Pan for a Minute on High Heat
- Sere Mushroom on High Heat for Under a Minute.

Add Broth
- 1 Cup Vegetable broth (made with mushrooms as well)
- Cook/Boil 1-2 minute

Add Arborio Rice (pre-cooked for 5 minutes still hard – Also best boiled in broth)
- Add Salt & Pepper to taste

Add 1 Table Spoon Wine Sauce
Wine Sauce Recipe – 2 cups wine with 1 cup sugar, 1 TS honey)
- 1 liter red wine (4.2 cups)
- ½ kilo sugar (15 tb sugar) (2.5 cups)
- 45 minutes stirring in medium heat, no cover 75 Degrees C = 167 F
Take off the heat and put right into the freezer as a shocker (also good for soups)
Add 1 Heaping Tablespoon Mushroom Butter
Mushroom Butter Recipe - 3 cups mushrooms for 1/2 cup butter
- (1-kilo Mushrooms – 15 cups – ½ kilo butter is 2.2 cups)
- Pinch pepper
- Pinch garlic
- Cook at 75 degrees C (167 F)
- 45 minutes high heat stirring whole time
- Blend very fine
- Then put in freezer as a cold shocker
- For health reasons use Organic Pasture raised butter
1 heaping table spoon of mushroom butter for 2 people

Add 1 Tablespoon Chopped Chives
And 1-2 Tablespoons More Olive Oil

Cook for one more minute covered

Stir/Mix well and serve hot.

Add truffles on top if you can get them.
