How to make Pollo Guisado by Chef Kelvin Fernandez

This is my Version of Pollo Guisado its not my grandmothers, its not my mothers, this is my version. I think its really really really good. I hope you enjoy this recipe and continue to cook with me.

Yields 4
1 whole chicken broken down to 10 pieces
2 breast cut in too two pieces, 2 wings, 2 legs, 2 thighs
2 tablespoons of oil
2 teaspoons of granulated sugar
1 tablespoon ground oregano
1 teaspoon of ground coriander
1 teaspoon of ground cumin
1 tablespoon of ground garlic or garlic powder
1 tablespoon of smoked paprika or regular paprika
2 tablespoon of Kosher Salt
juice of 1 lime
1 red onion sliced
5 cloves of garlic thin sliced
1 red pepper sliced no seeds
1/4 bunch of culantro
1/4 bunch of cilantro
3 tablespoons of Sofrito
8 oz can of tomato sauce

Sofrito
1 medium yellow onion
3 cloves of garlic
1 long green pepper diced
1 red pepper diced
2 table spoons evoo
1 28 oz can of crushed tomatoes
1 teaspoon of paprika
1 teaspoon of smoked paprika
1/4 bunch of cilantro
1/4 bunch of culantro
cook for 25 minutes and puree and reserve you can even freeze your sofrito

Serve your Pollo Guisado with White Rice or mashed potatoes
i served mine with avocado, maduros and white rice
